Dairy Free Gluten Free Banana Cake

It can be hard to meet allergy requirements but this cake is YUM!

Today we had Mum's Group and I had to come up with an afternoon tea that was dairy & gluten free.  I made this beautiful cake that was so moist and tasty.  All the mum's wanted the recipe so I thought I'd post it for them and everyone else to enjoy!

Ingredients:

1 1/2 cups gluten free plain flour
1 1/2 teaspoons gluten free baking powder
1/2 teaspoon bicarb soda
1/4 teaspoon ground nutmeg
1/2 cup vegetable oil (I used Rice Bran Oil as a healthier option)
3/4 cup raw sugar
2 tablespoons maple syrup
2 eggs (use No Egg powder for egg allergies)
3 large ripe bananas, mashed (I used a potato masher so it was still lumpy and not a paste)
1/3 cup chopped walnuts (omit for nut allergies)

Method:

Preheat oven to 180C. Grease a 22cm x 11cm loaf tin with oil and line with base and sides with baking paper
Sift the flour, baking powder, bicarb of soda and nutmeg into a large bowl and make a well in the centre.

In another bowl, whisk together the oil sugar and maple syrup, then whisk in the eggs one at a time.  Stir in the banana and nuts.  Pour the wet ingredients into the well of the dry ingredients and stir to combine.

Pour batter into the prepared cake tin. Bake for 50-60 mins until the top is golden and a skewer inserted into the centre of the cake comes out clean.  Cool in the tin for 10mins then turn out onto a wire rack.
